In particular, green vegetables, like spinach, broccoli, kale, mustard greens, collards, and turnip greens are a major source of antioxidant carotenoids lutein, which is in the eye lens. Vitamin C and E also seems to be important in preventing the formation and development of cataracts. Individuals who are especially vulnerable are individuals with a disease called galaktokinase deficiency. Dairy products should be avoided in these individuals because they contribute to the majority of the galactose. In addition, dairy products are high sources of fat and saturated fat, which is known to raise cholesterol levels.
