Vegetables that contain carotenoids which are essential. In particular, green vegetables, like spinach, broccoli, kale, mustard greens, collards, and turnip greens are a major source of antioxidant carotenoids lutein, which is in the eye lens. Vitamin C and E also seems to be important in preventing the formation and development of cataracts. Source of vitamin C include citrus fruits, peppers, tropical fruits, melons, strawberries, kiwi fruit, vegetables, tomatoes, potatoes, and sweet potatoes. Sources of vitamin E include wheat germ, cooked spinach, soy milk, different types of nuts, sunflower seeds, mango, and olive, peanut, and vegetable oil.

• Maintain a healthy cholesterol level
Studies show that high levels of cholesterol and triglycerides lead to increased risk of cataracts. Also, low levels of high density lipoprotein (HDL or "good cholesterol"), may increase the risk of cataracts. The best way to lower cholesterol is to avoid foods high in saturated fats, such as meat and dairy products, and trans fats, such as snack cakes and fried foods for the commercial.

• Avoid dairy products
Research shows that some people benefit from avoiding dairy products. The problem, at least theoretically, is that the lactose in dairy products broke during digestion to release a smaller sugar, called galactose, which can get into the lens. Individuals who are especially vulnerable are individuals with a disease called galaktokinase deficiency. Dairy products should be avoided in these individuals because they contribute to the majority of the galactose. In addition, dairy products are high sources of fat and saturated fat, which is known to raise cholesterol levels.
• Do not consume alcohol
People who drink more than two glasses per week of any type (beer, wine, or distilled) has a risk greater than 10 percent of certain types of cataracts.
